Ayu's distinctive aroma is infused in cooked rice. First, grill whole Ayu with charcoal. Then, put it over the rice soaked in dashi in a nabe (Japanese pot) and cook everything together until the rice is ready. Ayu's unique flavor, smokiness from charcoal, and dashi are all infused in the rice. It is absolutely comforting and delicious.
