Tuna that have been frozen at -60°C is called Super Frozen Tuna. Approximately 80% of tuna sold in the Japanese market is in this category.

Unique method of freezing tuna below -60°C on board keeps the freshness of the catch. Tuna is quickly bled, processed and frozen before rigor mortis sets in which is why it is said to be "fresher than fresh".

True World Foods' capability to store over 100,000 lbs. of product in a -60°C environment, together with the special method of defrosting Super Frozen Tuna loins, guarantees ready supplies of high quality products for our customers anytime of the year.

"The quality is so good, you will think it is fresh tuna!"

Preserving tuna in a sushi-quality state is now possible using a special technique. Immediately after the tuna is caught it is cleaned and flash frozen to -60°C. This process prevents dehydration, spoilage and bacteria growth - with very little moisture loss when thawed and no added chemicals or preservatives. Our process - a specialty of True World Foods - results in superior quality and just-caught taste.

We have installed special freezers at each location to keep our SuperFrozen Tuna perfectly preserved until it is delivered to our customers. This allows us to deliver the finest tuna, perfectly preserved at the moment of harvest.
